Simple Peanut Butter Cookies

This is one of my favorite peanut butter cookie recipes, because it’s so simple and so delicious.

2 cups smooth peanut butter (I use Jif brand)

3/4 cup granulated sugar

1/2 cup brown sugar

2 eggs

1 teaspoon vanilla

2 teaspoons baking soda

1.Move oven rack to the top position, and preheat to 350 degrees.

2. Stir the peanut butter and sugars together in a large bowl until well combined. Beat in eggs. Lastly, stir in vanilla and baking soda.

3. You can either roll dough into 1-inch balls or use a tablespoon scoop to drop the cookies on a greased cookie sheet.

4. Bake for 8 minutes. Let them cool on the cookie sheet a few minutes before transferring to wire cooling racks. Cookies will be kinda flat, but extremely soft and flavorful.

5. Variations: add 1/2 cup milk chocolate chips to the dough, or make a small impression in each dough ball with your finger a place a Hershey’s kiss on top.

Peanut butter jelly gems: Make a small impression in each dough ball with your finger and fill it with your favorite jam or jelly before baking. I recommend strawberry jam 🙂

This recipe makes about 3 dozen cookies. Enjoy and happy baking!!
